Lise's Buttermilk Banana Nut Bread

Time to bake again!  I didn't realize how much I missed it until I was busy measuring, mixing and smelling the deliciousness baking!

Today I bring you my buttermilk banana nut bread.  I decided to make this because the grocery store was selling big bags of overly ripe bananas for $1.99, so banana bread it is!  Not sure what other banana goodies I'll be making, but if you have any favorite recipes, please feel free to share!


Lise's Buttermilk Banana Nut Bread


Ingredients:
1 cup white sugar
1/3 cup raw sugar and brown sugar (equal parts to make 1/3 cup)
1/2 cup softened butter
2 eggs
1/2 cup buttermilk
1 tsp baking soda
1 tsp baking powder
2 cups all purpose flour
1 tsp vanilla
1 1/2 cups very ripe mashed bananas (very ripe means the skins are totally brown and the fruit is very soft and browning; this will give you naturally sweet, delicious banana bread)
3/4 cup chopped walnuts
1 greased and floured 9x5 loaf pan

Begin by combining all the sugars and butter.  I like using the 3 types because it gives a little richer taste to the banana bread.  Because you are combining the 3, the butter and sugar will not cream together; you can still see the sugar crystals.

Add the eggs, one at a time; now the mixture will get creamy.

Mix the baking soda into the buttermilk, then add to the mix.

Now sift the flour and baking powder together then add it to the mix.

Mix in the banana, vanilla and chopped nuts (my bananas were not quite as ripe as I like them to be; I like them when I can see the bruising/browning in the fruit).

Pour the batter into the already prepared pan, and put it in the oven at 300 degrees for 90 minutes or so.  The bread is ready when a toothpick stuck into the middle comes out clean. 


Cool for 20 minutes before removing from the pan.  



This will make 1 loaf; you can double the recipe if you like. 

I have to share my new measuring spoons with you.  Well, they aren't new, they were at the river house and since I bake so much here at the cabin, I decided this was a much better home for them.  Funny, but these make me smile every time I use them!  They say Love, Dream, Joy, Laughter...what's not to love about them!  It's the simple things...

Here is what I just made. It only makes 12 big cookies, just perfect (well almost) for 2 people.

Cowboy cookies
1/2 c. shortening
1/2 c brown sugar
1/2 c. white sugar
Cream
add 1 egg
3/4 c. flour
1/2 t. baking powder
1/8 t. salt
1 t. vanilla
1 c. corn flakes
1 c. oats

Roll into balls small egg size and slightly flatten.
Bake (I used a sillpat sheet) 350 12-14 minutes.
