Chocolate Dipped Strawberries

Chocolate dipped strawberries are an easy to make, elegant treat. All you need is fresh strawberries, and baking chocolate.

When purchasing (or picking) your strawberries, only select the ones that are red all the way to the tip. Whitish green tips mean the berries are not quite ripe.

I use semi sweet chocolate for dipping and white chocolate for drizzling.

Break the chocolate into cubes (today I used 3 ounces of semi sweet chocolate, 1 ounce white). Melt the chocolate in the microwave for 30 seconds, stir, and then heat for another 30 seconds (less chocolate, less time). Heat an additional 10 seconds at a time if needed.
I like to use a small bowl, it makes it easier to surround the berries with the chocolate when rolling.

Cover your plate with a sheet of wax paper (this is important, I forgot this step and had to scrape my berries off the plate). Dip the berries one at a time and place each onto the wax paper to begin cooling. You may need to reheat the chocolate for 10 seconds or so as you proceed.

Melt the white chocolate and drizzled it over some (or all) of the chocolate dipped berries.
Place the dish into the refrigerator and once cooled, peel the berries off the wax paper and place them on a serving dish.

When you bite into one of these beauties, the chocolate crunches a little and the berry explodes with juiciness. Easy, elegant and best of all, a scrumptious confection.

So easy to do Marie. We've decided we actually prefer the white chocolate for dipping, though my husband does like the semi sweet chocolate drizzled with the white. Good stuff!

My mom always got a box of chocolate covered strawberries for her birthday from her stepson. She got remarried at 79 and I got three siblings after a lifetime as an only child. Even after their father passed two of the three were great to her until the very end. Your berries reminded me of some fun times with Mom. - Margy
